Kitchen Update

Well we had the lady from New Prairie come out to give us an estimate. It was, um, a little high. Like nearly ten times what we wanted to spend high. So, yeah, on to DIY.

Our lovely neighbor, Pat, this weekend took us to her friend Sarah's house, to introduce us to Sarah and her husband who had done a lot of work on their old house themselves. Well, Sarah had. She's amazing. She made me feel like a total loser, actually. She's one of those people who knits, and has a rain barrel, and makes her own ice cream every week, and, oh, I don't know, put in her own dry-wall. So she gave me lots of ideas (and a bowl of apple crisp with homemade frozen yogurt). I'll let you know how we get on with improvements . . .

In other news: we're trying to be vegan. It was a decision based, in part, on M's cholesterol report. So, anyway, if you have any fantastic vegan recipes, send em my way! Thanks, Sara, for the vegan lasagna. I'm trying it soon. Tried vegan french toast this weekend. That one needs a little tweaking.

And speaking of kitchens and food . . . check out my insanely talented little brother here - the "Daring Danish" entry blows my mind. My brother made that! Once upon a time, he wouldn't eat food that touched other food on his plate!

I have a good vegan French toast recipe, but it's packed away...Remind me after July 5th (when we'll hopefully be done moving and unpacked!!) and I'll send it along. It involves a blender and is sort of messy, but delish. Also, did I send along the peanut noodles recipe? SOO good in summer. I have more, too, of course. And also things that I make but don't have recipes for because I just throw them together, but could probably approximate on paper. I can also give send you a list of the better-tasting vegan brands (like soy products, faux meats, butter substitutions, soy/rice cheese, etc.)

Hi SV,

I've been experimenting with a lot of the vegan stuff for some time - fake meat/cheese for sandwiches, for example, and soy butter stuff . . . but I had no idea about vegan mayo, so thanks for that one, and if you have other favorites, I'm all ears (er, eyes). You did send me the peanut noodles (looks good, thanks!) but M for his part can't eat peanuts (the extra rub - the vegan recipes need to be low in sat. fat, which is a problem for, say, coconut curries [one of my all-time favorite things] and peanuts are off the charts, though, oddly, walnuts and almonds are okay, and walnuts especially encouraged). Blah blah. I sound like an eighty-year-old.

Um . . .

Okay, back to work.

there is a web site for you. i just googled fat free vegan recipes and got to a perfect site with millions (maybe hundreds) of recipes for you to try.

Speaking of Danish, you know of course, going Vegan will mean no Danish and no Brioche when you come to visit. I'll still make some yummy crusty bread though.

No recipes off the top of my head, but I have a subscription to Veggie Times, and they regularly have vegan recipes, so I'll pass any good ones along that I come across.

Yep, back from my trip!

So, I found a quick easy vegan recipe that I thought might be good for summer - because it's popsicles!

2 cups fresh pineapple chunks
1 large banana, sliced
3/4 cup light coconut milk
1/4 to 1/2 cup agave nectar

Puree ingredients in blender 1 to 2 minutes, or until mixture is smooth. Ladle into ice pop molds (or an ice tray with little popsicle sticks!) and freeze for 4 hours.

I haven't tried it, but it sounded so good!
